Just remember not to put your fries in the fridge hot, otherwise it will increase the inner temperature of the fridge which will then make foods that need to stay cold unsafe to eat.

Tbh there are two way more important facts: 1. The potato. Potatoes vary a lot in their characteristics and the types that are the best for making fries aren't typically found in your average grocery store. 2. Consistency. Potatoes behave differently depending on the time of year/by the season. If you are a restaurant you have it a lot easier to get a more consistent product from your supplier.
